The Flowers
The Raspberry brambles of Nova Scotia bloom in mid summer with white flowers that are very attractive to bees. In exchange for sweet nectar, the flowers are pollinated by the bees and turn into raspberries.
The Flavour
Raspberry honey is delicate, with notes of marshmallow and raspberry.
Pairings
Raspberry honey pairs nicely with mascarpone or cream cheese, or drizzled over vanilla ice cream with fresh berries. Sweeten a summer cocktail or freshly squeezed lemonade.
